Day One

Started the fast, and this was the first dinner.















It was fantastic.  It doesn't seem like fasting...but hey...not complaining.

We can't eat a whole slew of foods (meat, chicken, fish, etc.  see the previous post link for the whole list).  So Jen made this fantastic meal with just the basics.

As promised, here is the menu (with recipes)

Fire Roasted Tomatoes and Beans over Rice
1 bag brown rice
1 can pinto beans
1 can fire roasted diced tomatoes w/garlic
1/4 tsp. jalapeño (seedless)
1/4 cup water
1/8 cup chopped celery
1 tsp. onion powder
1 tsp. garlic powder

Boil Rice as per directions on box.
Put all other ingredients into a pot
Bring to a boil, then let simmer for 5 minutes.

Steamed Cabbage & Onions
1 Cabbage
1 medium onion
1 cup water
1/4 cup olive oil
1 tsp. onion powder
1 tsp. garlic powder
salt & pepper to taste

Cut up the whole cabbage and medium onion
Fill large pot with water, then put in all ingredients
Bring to a boil, then simmer for 25 - 30 minutes until cabbage is tender

Garden Salad
Spinach Leaves
Cucumber
Yellow Bell Pepper
Avocado
Olive Oil & Balsamic Vinegar (dressing)

We had water, which should be the primary staple (we can have fruit juice, but I will primarily stick with water.)

We made WAY too much food, but without a meat, Jen thought we would need more.  It turns out the beans and rice were extremely filling, and we saved the salad for tomorrows lunch.

I am really excited about this fast, as hopefully it will surround my life with a simpler way of thinking.

My goals are to reconnect, reset and reinvigorate.
